From hives taken up to the Somerset moors at the end of summer allowing the bees to forage freely across swathes of Ling Heather. Dale Gibson at Bermondsey Street Bees has made the decision to cream this crop, a traditional process which breaks up Heather honey’s large crystalline structure into a fine texture and gives the honey a creamy appearance

Olly’s tasting note: “Smells like the inside of a hive! Funky, tangy, intense and vibrant with a pleasingly bumpy texture. More of a gastronomic honey, well suited to a cheeseboard – great with a chunk of Parmesan”
